Beautiful inside and out: Agatha Kulaga at the Ovenry

Agatha Kulaga (opens in new tab) is the co-founder and CEO of Ovenly (opens in new tab), a Brooklyn bakery with a cult following synonymous with the savory and sweet baked goods movement. Or the crippling ordeal that suddenly struck in 2020. Ten years and 10,000 Brooklyn Blackout Cakes (opens in new tab) later, she's rebuilding her business in the wake of COVID-19 and trying to maintain her happiness and personal strength in the process. She's taking a sensible approach: "As much as I love clean eating and daily exercise," says this 20-year Pilates entrepreneur, "I love making homemade pasta, cooking tempting dishes, eating lots of Ovenly (opens in new tab) treats, sourdough I also indulge in things that bring me great pleasure, like baking bread and devouring it with French salted butter and red wine," he says. Here is Craga's recipe for balance and her favorite vegan lemon raspberry loaf.

Recipe for success: vegan lemon raspberry loaf
1. Preheat oven to 350°F. Grease a 9 x 5-inch loaf pan with canola oil. Using parchment paper three times the length and width of the loaf pan, press the parchment into the loaf so that the two long sides overhang. Brush the parchment with a thin layer of canola oil.
2. In a large bowl, whisk together 1/2 cup canola oil and 1 cup sugar until well combined. Add the zest of 2 lemons, 2 tablespoons lemon juice and 1¼ teaspoons vanilla extract and emulsify with a whisk until fluffy.
3. In a separate large bowl, whisk together 2¼ cups all-purpose flour, 1½ teaspoons baking powder, ½ teaspoon salt, and 3 tablespoons poppy seeds.
4. Stir half of the flour mixture into the sugar mixture. Mix with a wooden or rubber spatula until combined. Then add the plain almond milk and mix until combined. The mixture should be moistened.
5. Add the other half of the flour mixture to the wet ingredients and stir until combined.
6. In a small bowl, gently mix 2 tablespoons flour with 1 cup fresh or frozen raspberries.
7. Gently stir 7. raspberries into wet ingredients. This process should be done slowly so that the raspberries do not lose their shape.
8. Pour the batter into the prepared loaf tin and bake for 75 to 80 minutes, or until a toothpick inserted into the center of the loaf comes out clean. When baked, the surface of the loaf will be slightly golden brown. Let cool completely on a wire rack before brushing with the glaze.
1. While the loaf is baking, prepare the glaze. Place 4 raspberries in a small bowl and mash with a rubber spatula or the back of a spoon to form a puree.
2. Add 1 tablespoon lemon juice and 3/4 cup confectioners' sugar plus 1 tablespoon to the raspberries. Beat until smooth and bright pink. The consistency should be thick like cake batter, spreadable but not stiff. If desired, add confectioners' sugar, 1 tablespoon at a time, to desired consistency.
3. Using a small offset spatula (or butter knife), spread a few tablespoons of the raspberry-lemon glaze over the cooled bread, smoothing it back and forth from the center to the outside edges, covering the entire surface.
