Prepare the persimmons

Place a skillet over medium heat. Add 5 medium-sized fuyu persimmons and saute for 2 minutes. Add 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, 1 tablespoon fresh ginger (finely chopped), 1 tablespoon maple syrup, and zest of 1 lemon; cook for 2 minutes. Add the juice of 1 lemon. Heat for 2 more minutes. Set aside.

Make the crisp topping

In a bowl, combine 1/2 cup cassava flour (or gluten-free), 1/3 cup coconut flour, 1/3 cup gluten-free oats, 1/2 cup chopped pumpkin seeds and 4 tablespoons coconut sugar. Add 2 tablespoons softened butter, 3 tablespoons coconut oil, 4 tablespoons water, and 1 teaspoon sea salt. Mix until crumbly. Place crumble on top of persimmons in skillet. Transfer pan to oven and bake at 375 degrees for 30 minutes until golden brown. Serve with ice cream, mint, candied ginger, pickled fruit, or coconut milk, if desired!
