Prepare 2-3 pounds of oxtail and soak in cold water for at least 1 hour to drain the blood. Drain.

Place oxtail in a large pot of cold water and bring to a boil over high heat. Boil over medium heat for 5 minutes. Rinse the oxtail, return to the pot, and add enough water to cover the oxtail. Bring to a boil over high heat, then reduce heat to medium and boil for 5 to 6 hours. The goal is to simmer it long enough to completely drain the blood. By the time the soup is done, it will be white in color, rather than the clear brown of a typical Western stock. When the soup is milky white, remove it from the heat and allow it to cool. Remove the fat from the top and place on a plate. Season with salt and pepper to taste and enjoy as is or with green onions, rice, or noodles.
