Sensory Deprivation. "Kind of weird, but I listen to binaural beats (opens in new tab). I lay in bed with headphones on and zone out for 20 to 30 minutes. Afterwards, I feel very light-headed and good. It feels like a sensory deprivation tank. before COVID, I used to go to Just Float (open in new tab) in LA once a month. I feel everything blocked out and the tension eases. It's the best nap of my life."

1. Skin on of 6 bone-in chicken thighs (or your favorite cut) in a pot and bring to a boil. If making vegetarian, use 2-3 cups of mushrooms or other vegetables; after 20 minutes, remove chicken, remove skin, and chop finely.

2. Add 2 cups of chicken stock to the boiled water with the chicken and 2 cups of long grain rice. Simmer slowly until porridge-like (about 1 hour). Return the chicken.

3. Place in individual bowls and top with a little fish sauce (I'm Vietnamese and prefer fish sauce, but it adds umami flavor, so use to your taste). You can also top with garlic chili sauce and Maggi soy sauce. It's simple and delicious at its best.
